1. Introduction of Keidaien

■ Welcome

A soup dish of Hokkaido with delicious ingredients of Hokkaido made by putting vegetables, fish, and meat into a big pot and stewed with a secret soup. This soup dish is called chanko-nabe which sumo wrestlers eat in a sumo stable. Keidaien is a long-established restaurant, conveying the flavor made by famous Yokozuna Kitanofuji.

The chanko-nabe sumo wrestler's stew of Keidaien is the flavor of Kitanofuji, the 52nd Yokozuna from Asahikawa, Hokkaido. The famous Yokozuna Kitanofuji is well known as an epicure, and the flavor is famous for having fed and grown young wrestlers to be large in the Kokonoe stable training school. That's how delicious it is.
The chanko-nabe recipe from this Kokonoe stable was handed down, and is the chanko-nabe of Keidaien.
The biggest characteristic of the secret chanko-nabe soup (soy sauce-based) is that it stews seasonal ingredients of Hokkaido. Please enjoy the style of authentic chanko-nabe.

2. About chanko-nabe

It is a hotpot cuisine of chanko soup that compares with the three great world soups (tom yum goong of Thailand, Chinese shark fin soup, French bouillabaisse, and Russian borscht), and is a sumo wrestler's soup dish eaten in sumo stables.
You drink the piping hot soup, eat the steamy hot contents and then drink some more of the soup. Warming you up from the body's core, the dish has a medicinal effect (nutritionally balanced cuisine to power-up the immune system).

The available flavors are, chanko flavor (soy sauce base), salt flavor, and miso flavor. The ingredients such as seasonal vegetables of Hokkaido, meat, and fish are put in a big pot and stewed with the soup, then eaten together.
